Prawns commonly known as kamba in swahili is one of the most popular dish in their food culture.The Indian Ocean provides a lot of sea food like,crabs,lobster,calamari,octopus,oysters,scallops and many more.Since most of the coastal people practice fishing,this has made availability of the same to be easy and affordable.

Follow the procedures below and try out my quick and easy recipe from the coastal community of Kenya,Pan-seared Kamba(prawns) with coconut rice.

Ingredients

250 grams Prawns(Kamba with head and scale off)
1 Lemon (juice)
2 cloves of garlic (finely chopped)
1 small onion (finely chopped)
Cooking oil
Salt and pepper
1/cup rice
1 cup coconut milk

Procedure

1.In a cooking pot,bring to boil the coconut milk and add the rice and salt then simmer the rice until it cooks.
2.For the prawns,put cooking oil in a pan and add the prawns,sear for a few seconds then add the onions,garlic,lemon juice,salt and pepper to taste!

Serve when ready and enjoy the meal
