Bhajias are snacks originally from Indian Cuisine which are normally spicy.I replicated the original recipe and twitched it to use arrow roots instead of potatoes to give it an African twist.Try out the recipe and i believe you will love the end results.
100 grams arroroots(brunoise)
200 grams gram flour
Salt and pepper
Cilantro (roughly cut)
1 green/red chili (chopped)
1/2 tea spoon baking powder
1/2 tea spoon tumeric powder
1 tea spoon whole cummin seeds
30 grams onions (finely chopped)
10 grams garlic(finely chopped)
10 grams ginger (finely chopped)
Cooking oil (for frying)
1.Mix the gram flour and all the spices with a little water at a time, to make a thick batter (slightly thicker than pancake batter) then season to taste.
2.Pre-heat oil and on medium heat.Add little balls of the mixture in the medium heat oil.This will allow the bhajias to cook well both on the outside and inside
3.After they are cooked well.darin in agrease proof to get rid of excess oil then serve with home made chili sauce.
